As summer approaches we see fresh produce in abundance, fruits like berries, melons and plums are so juicy and refreshing, making them perfect for a hot summer’s day. But it’s the vegetables at this time of year that I get excited about. Fresh sweetcorn, scorched on the barbie or just drizzled with butter is as close as we can get to a bite of sunshine. Most summer vegetables are great for baking, grilling and steaming. Vibrant green beans, tomatoes and capsicums are at their absolute best at this time of year. And don’t forget that most summer veggies are perfect in salads too. This makes summer a perfect time to increase your vegetable intake.
